Chicken and Corn Quiche

Chicken and Corn Quiche

I've been looking for things I can cook that my partner can take to work with him that aren't salads, sandwiches or left overs. He unfortunately doesn't like egg, which ruled out quiches, or so I thought. With 9 eggs for 7 quiches I wasn't holding my breath on him liking them but the handful of cheese, the crispness of the corn and the fact it was not a sandwich won out! So here's my recipe for chicken and corn quiche!


Ingredients:

9 eggs
Not a great photo - Flash made them look yellow

Equipment:

Muffin Tray
OR
Cake Tin

Info:

Makes 7 (depending of muffin tray size) 

Allergens: Egg.

Recipe:

1. Crack 9 eggs into bowl.
2. Beat eggs together. **add anything else in this step**
3. Pour egg mixture into greased muffin tray ( I use cupcake patties because this recipe sticks to EVERYTHING)
4. Cook at 180 for 15 minutes then until knife comes out clean (depends on size of muffin tray and how much you put in - mine took 40 minutes but were large muffin sizes and had cheese in them). You should be okay to check them every 5 minutes, they wont burn easily.

Comments:

The recipe above is the BASIC quiche recipe, obviously not the 'Chicken and Corn Quiche' recipe. This is because when I'm at home, don't want to go shopping and am looking for a recipe that I can make without getting out of my PJ's it's so hard to find ones! That's why most of my recipes are super basic. 

Variations:

I put a handful of cheese in my quiches, some Italian seasoning, salt and pepper, a cooked chicken thigh fillet shredded and half a cob of corn off the cob into my mixture and it was amazing. I also made one with Vegemite and more cheese. Not so good.. But tuna and corn will be my next one and I'm sure it will be amazing. My point is, don't be afraid to try weird things. My partner and I made nutella wontons the other night and they were AMAZING (Yes I know, not healthy!), but my point is, even a basic recipe can be great :) Just get creative! and if not! I'll do the creativeness for you!

Storage Instructions:

I would say you could refrigerate these for about 3 days. Not sure about freezing times but I would say it's about the same as egg. They reheat in the microwave really well.
